I guess what's old is new again! I was surprised to receive a request for a Sonic cake... I didn't think Sonic was still around or that kids knew who he was. I love the colours on this cake and I hope Alfonso Jr. was happy with it. The client also requested a caramel filling for the cake. I've never done a caramel sauce before (we did one in class, but my partner made it while I was working on something else). Apparently there is a method out there that involves boiling a can of condensed milk for 4 hours. To spite the reassurances on the internet, I decided to heed the "do not heat" warning on the label of the can. With my luck, the thing would have exploded all over my kitchen and scarred me for life. So I made a caramel sauce the fashioned way: unbelievably hot sugar, whisked cautiously with cream. I was very happy with the colour.
